Ever since we bought a 25 pound box of green chile, we’ve been eating green chile everything. Well, let me be a little more honest…Mike’s been eating green chile everything and I’ve just been regretting the fact that I decided that we should get a box of hot instead of a box of mild. Let me tell you, hot hatch chile are are forking hot.
Anyway, hotness aside, green chile can really go in everything. Take for example, fried rice. You might not think it’s not something that you would ever see in fried rice, but let me tell you, it works. The smokiness of the chile with the smokiness of the fried rice is just amazing. I think even my mom would think so.
My mom is who I learned to make fried rice from, of course. Fried rice dinners would be my favorite dinners growing up because I was (and still kind of am) a carb monster and fried rice meant that I could eat just carbs and nothing else. My mom probably loved fried rice night too because when you think about it, fried rice is the ultimate one wok (pan) dish. It’s taking leftover rice and turning it into a whole nutritious meal with just a tiny bit of protein and, if you’re anything like my mom, a whole lot of veggies.
This hatch green chile cheeseburger fried rice probably isn’t on the nutritious side, but it sure is delicious. Maybe even more delicious that hatch green chile cheeseburgers? I guess that depends on if you like bread or rice better. This fried rice has all the good things that green chile cheeseburgers have: crispy pan fried beef, onions, tomatoes, lettuce, green chile, and of course cheese.
The tomatoes and lettuce cook down a tiny bit and get silky and soft, the cheese melts and crisps up around the rice and the green chile makes everything better. Definitely make this and tell me what you think!
PS – Pro tip: make sure you use day old rice to make fried rice. And if you don’t plan ahead, just make rice, fluff it up, spread it out, and dry it out in the fridge.
Hatch Green Chile Cheeseburger Fried Rice
Ingredients
- 1/2 lb ground beef
- oil for the pan
- 1/2 onion diced
- 2 cups cooked rice cold, preferably day old
- 1/2 cup chopped roasted Hatch green chile
- 1 cup lettuce shredded/chopped
- 1/2 tomato diced
- salt and freshly ground pepper to taste
- 1/2 cup shredded mozzarella cheese or cheese of choice
- 2 eggs
- cilantro to finish, if desired
Instructions
- Heat a large skillet or wok over medium high heat. Add the ground beef, pressing down and searing crispy and deeply browned. Flip and cook the other side and when brown, break up into small bits.
- Turn the heat down to medium and add the onions and cook slightly, 1–2 minutes.
- If the skillet is dry, add a bit of oil and then add the rice. Turn the heat up to high and fry, stirring occasionally until the rice is crispy and heated through. If you’re using rice from the fridge, it’s best to break it up with slightly wet hands before putting in the pan.
- Mix in the green chiles, chopped lettuce, and tomato. Stir in the cheese and toss everything together so that everything is evenly distributed. Season with salt and pepper to taste.
- In another non stick pan, heat up a bit of oil and fry a sunny side up egg per person.
- Plate the rice and top each plate with an egg. Finish with cilantro and enjoy immediately.

This meal is so delicious and easy. We have made it twice so far and my picky 5 year old loves it as well as my 15 month old.
Lettuce is not what you expect, but hey it works! You’re right, there are many kinds of cheese that would do this dish proud.
Try medium green Chile. Mild is like eating a bell pepper. We do medium hot.
