If you ask me what my go-to comfort food is, I’ll inevitably answer: noodles. There’s just something about a big bowl of tangled up noodles, dressed up in sauce, that gets me every time. If I’m looking for something quick, easy, and satisfying when I’m hungry, these noodles are it!
I had a batch of homemade XO sauce that I wanted to use up, as well as some Chinese sausages. If you haven’t had XO sauce before, I hope you have a chance to try it. XO sauce is an absolutely addictive spicy seafood sauce. Popular theory says that it was invented in the 80s, by a fancy hotel chef who was trying to make an extra expensive, extra luxurious condiment. You can find it served at nicer Chinese restaurants as a sort of dipping sauce or fried up with vegetables, rice, or noodles. As for the XO, it doesn’t stand for kisses and hugs, it stands for extra old, like XO cognac.
If you happen to have xo sauce and Chinese sausage in your fridge, you’re in for a quick 15 minute meal. And if you don’t, just head on over to your friendly neighborhood Asian grocery store and pick some up. Both items keep in the fridge almost indefinitely, so they’re perfect for those times when you don’t have any groceries at home but want a comforting, yet luxurious bowl of noodles.

Chinese Sausage and XO Sauce Noodles Recipe
serves 4
- 1 tablespoon oil
- 3 links Chinese sausage, sliced
- 1 package oil noodles (16 oz) or noodles of choice
- 1/4 cup xo sauce
- 2 tablespoons soy sauce
- sliced green onions
I like to use the Shanghai oil noodles in the fridge section of our local Asian grocery store, but you can use lo mein noodles, or even spaghetti. Regardless, of which noodles you use, be sure to cook noodles according to the package, and drain well.
Heat up oil in a large skillet. Add the sausage and cook until slightly crispy, stirring occasionally, 2-3 minutes. Add in the cooked noodles, tossing. Add the xo and soy sauce, gently tossing and cooking over medium-high heat. Enjoy immediately with sliced green onions.
